Monster Rhubarb — YUM!
We made our first rhubarb crisp a few days ago. So good. Rhubarb is unheard of where I come from, and it’s a tragedy. If I could live the rest of my life with this lovely plant available in my kitchen, I wouldn’t complain.
Here’s a few fun facts:
Rhubarb is a good source of dietary fiber, Vitamin C, Vitamin K, and minerals. (So you don’t have to feel too bad about eating those crisps and pies. It’s got good stuff, too!)
Just don’t eat the leaves — those are poisonous.
