IMG_0455Baby Parsnip. Isn’t it cute?

I learned this year that parsnips can overwinter. So instead of harvesting them all, they can be left in the ground and pulled up as needed through the winter. I’ll have to see how that works.

I don’t think I’ve ever eaten a parsnip.

Anybody know how to cook a parsnip?

    Roast ’em with carrots and potatoes, a little olive oil and salt and pepper. I roast at 375 for 40 ish minutes
